Meet our global vanilla family. They come from Papua New Guinea, Indonesia and Australia.
Our two main families are Planifolia and Tahitian (Tahitensis). These are two are very different cousins. Planifolia

Perfect in delicate desserts such as ice creams, vanilla slices, or she is truly impressive when she is on fully display in a vodka or gin bottle.

But be warned! she is very shy and high temperatures will cause her to disappear. Many amateur cooks and chefs have scared her away and wonder why they have missed the unique expression of flavor and aroma that was promised but never fulfilled.
